BLANC DE BLANCS- Just when you thought Chardonnay couldn't improve, we introduce the Blanc de Blancs—referred to as “white of whites” in France. This delightful wine features vibrant lime and peach flavors, complemented by a light sparkle that invites you to share it with friends.
CYRIL SEMILLON -Hand-Picked Grapes from Mature Vines. Grapes carefully selected from 40-year-old vines impart a crisp, clean, and refreshing character to this Semillon. It features a refined acid structure, harmoniously paired with the classic citrus notes of lemon and lime that are characteristic of the Hunter region.
MAISIE EVELYN GEWURZTRAMINER - An elegant style of wine, the Maisie Evelyn Gewurztraminer displays an excellent floral nose, lifted fruit characteristics of lychees and white peach with an understated sweetness and a crisp acid structure.
CHICKEN SHED CHARDONNAY - An excellent example of a lightly oaked Hunter Chardonnay. Matured for six months in old French oak barrels to produce a well balanced delicious wine with subtle lime and melon/fig characters with just a hint of toastiness.
ALEXANDER CHARDONNAY - The Alex is our premier white wine, showcasing a traditional Chardonnay at its finest. With delightful toasted hazelnut and vanilla notes developed through wild yeast fermentation in French Oak barrels, this wine offers a flavor experience that matches the enticing aromas of fig, peach, and lime. It can be cellared for up to six years.
ROSALIE JOAN VERDELHO - Often described as “sunshine in a bottle,” this Portuguese varietal offers lively acidity with ripe tropical flavours of passionfruit, melon and pineapple.
CRACKLIN ROSE - Affectionately known as our “grown-up fruit juice,” this Shiraz delivers fresh apple and strawberry notes with an easy, refreshing style — perfect when you’re craving red but the weather calls for white.
SHAREHOLDERS SHIRAZ - Crafted in true Hunter Valley style, this medium-bodied Shiraz reveals layers of mulberry, red currant and blackberry fruit complemented by a subtle lift of white pepper spice. Maturation in gentle French oak enhances texture and complexity without overpowering the fruit, delivering a refined, balanced wine with supple tannins and a long, savoury finish.
ANDREW WATSON TEMPRANILLO - Our estate grown Andrew Watson Tempranillo is a medium bodied wine displaying a ripe raspberry fruit palate with hints of liquorice and spice. Twelve months maturation in French oak barrels has added some wonderful, subtle toasty, characters.
CEO SHIRAZ - This exquisite wine is crafted from a carefully chosen selection of grapes by the CEO of Ernest Hill. It boasts a full-bodied profile with rich dark berry flavors, a hint of white pepper, a subtle earthiness, and delightful toasty vanilla notes resulting from 16 months of aging in French oak barrels. The smooth tannins complete this remarkable wine.
CEO CABERNET SAUVIGNON - Crafted from a carefully chosen single vineyard parcel of Hunter grapes, this exquisite wine showcases rich flavors of blackcurrant and blackberry. It is complemented by delicate toasty vanilla notes from oak barrel maturation and features silky-smooth tannins. If you have the patience, it can be cellared for up to 10 years.
CEO SHIRAZ CABERNET - The Timeless Australian Blend Experience the richness of this classic Aussie combination. The complexity arises from the fusion of Shiraz's red currant and pepper notes with the black currant and cassis flavors of Cabernet. With 16 months in French Oak, this wine is truly built to last.
RODNEY MERLOT - Our flagship Merlot. Produced only in select vintages. A medium bodied wine that displays both opulence and elegance. Ripe plum and blueberry characters imbued with beautifully balanced toasty elements from a year in New French oak barrels. Soft spice and a little earthiness make this wine a keeper. Drinking now but this wine would definitely benefit from a few years in the cellar.
DAM MERLOT - An uncommon variety in the Hunter, this Merlot displays soft plum and red fruit characters with a lighter, gently rounded style and subtle sweetness on the finish.
WILLIAM HENRY SHIRAZ - Our flagship red. Made only in select years, this wine represents the pinnacle of shiraz making here at the Hill. Hand selected bunches from low yielding 40 year old vines are the foundation of this wine. A big ripe blackberry/mulberry fruit palate, subtle hints of spice, and luscious savoury tones are interwoven with touches of Hunter earthiness. 14 months maturation in our best French oak, ensures the tannins are fine and smooth.
LUNA SPARK - A late harvest Semillon, this lively sweet citrus characters with just a hint of spritz is a must for your collection. Incredibly refreshing!
MOONDANCE - A beautifully expressive, lighter-style late-picked Gewurztraminer, offering lifted aromas of rose petals and Turkish delight. The palate shows delicate lychee flavours with a clean, crisp finish.
11 O'CLOCKER MUSCAT - This delightful liqueur Muscat is a blend of vintages averaging eight years in age. Indulge in the luxurious flavors of rich caramel and toffee. No additional ingredients are necessary; it's like having fruit cake in a bottle. When the clock strikes 11 PM, grab the 11 O’Clocker.
11 O'CLOCKER TAWNY PORT - It's 11 O'clock, the cheese is devoured and the wine has run dry. What do you do? Reach for an 11 O'Clocker and savour the rich flavours of toffee, cherry, vanilla and caramel. The wine although sweet still finishes fresh and lively.
